Panjiri has been part of family kitchens across the Indian subcontinent for generations. Every family has its own version, passed from one kitchen to the next and shaped by the people who make it. That's how traditions survive not because they stay exactly the same, but because people continue making them.

Our family's version has always been made with roasted moong lentils instead of semolina or wheat flour. It's the same recipe we still make today, slow-roasted in ghee and prepared in small batches here in California.
